Several years ago I learned this neat little trick when going to spend the day with my in-laws on their boat. Alcohol makes the whole day run a lot smoother. And you can add a bit of fun to the whole experience by not serving the usual liquid refreshments. Since I had learned that someone’s chardonnay and lime Jell-O shots were a huge hit at their marina, I thought I’d play on that a bit. I made a batch of cranberry/vodka Jell-O squares. The nice thing about these, is that they can be out in the sun and not melt into a colorful sticky pool of goo and you can eat them with your fingers. Not only were my in-laws smashed, so were all of their friends at the marina. It ended up being a really nice day for me us because the in-laws were giddy (read: smashed) and then they were off to deliver the drunken squares of Jell-O goodness to their friends, so Craig and I got to hang out on the boat alone and take the jet skis out. There was a lot of vodka in those things.
Fast forward a few years to today (or yesterday to be exact). I had a party to go to where I knew there would be at least a couple of people that I’m not particularly fond of. I also knew that this was an excellent opportunity to have some fun with two other people who, in the past, have gotten me smashed on their peach daquiris…so this was payback. (I’m going to blame this whole thing on Craig, since he couldn’t come with me to the party. If he was going with me, he would have distracted me from the annoyances and temptations. So I had to take matters into my own hands.) The hostess was serving margaritas and vodka/cranberry, so I needed to come up with something different. Being on the Mojito kick that I am, I came up with this non-traditional Jell-O mojito.
When they’re all shimmering in their glass bowl, with their refreshing green color and little speckles of chopped mint they look oh so innocuous and cute. Kind of like the cute precious face of that little girl sitting next to you on the plane right before she pukes on you. Don’t let the shimmery looks of these things fool you…these are not kid friendly Jell-O Jigglers. These are tasty, adult, knock you on your ass alcohol delivery systems wrapped up in cute packaging. Consider yourself warned or armed (depending on your perspective).
Ingredients
- 2 Envelopes Unflavored Gelatin (I use Knox Original Knox Gelatine)
- 1/2 Cup Sugar
- 1 Tablespoon Finely Minced Mint
- 3/4 Cup Water (separated)
- 1/2 Cup Rose’s Lime Juice
- 3/4 Cup White Rum (separated)
- 3/8 Teaspoon Peppermint Extract
Directions
Mint Simple Syrup – In a small saucepan, mix 1/2 cup water with sugar and mint extract and bring to a boil. Keep stirring mixture until just before it boils. Once sugar is melted, remove from heat.
Pour 1/2 cup rum and Rose’s lime juice in large bowl, then sprinkle with gelatin; let stand 1 minute. Pour 1/4 cup rum and 1/4 cup water in a microwave save cup and heat to boiling. Add hot water and rum, as well as 1/2 cup mint simple syrup to bowl with gelatin. Stir until gelatin is dissolved, approximately 5 minutes. (If gelatin is not dissolving after a couple of minutes, you can put it in the microwave for 30 seconds – do not boil).
Lightly oil an 8″x8″x2″ pan with oil. Pour gelatin mixture into pan and refrigerate. After 1 hour remove pan and sprinkle with chopped mint. Use a fork to drag across mint to mix well into gelatin. Put pan back into refrigerator. Chill for at least 4 hours. Before serving, cut into squares.

These look fantastic! I love drinking mojitos- so it’d be interesting to take mojito jello shots – I’ve never had a non-traditional jello shot:)
I was never a big fan of those squishy jello shots in the cups – something about the consistency and mouthfeel of squished up jello. I’ve always been a “knox blox” kind of girl. Ok, I like to play with my food sometimes, and these let me get away with it.
