
Are you still trying to figure out something nice, but a little decadent, for Valentine’s day dinner? How about some homemade ice cream? Yeah, I know it’s still ridiculously cold outside, but it’s always time for ice cream. This easy ice cream recipe only uses five ingredients and you don’t even need an ice cream maker. How’s that for easy…and convenient?
I was going to do a cutesy post for Valentine’s day that would be easy and stress free. It was going to be making heart shaped ice creams (with store bought ice cream and cookie cutters) that would sit in a pool of homemade chocolate sauce. I then decided that that was going to be a big flaming pain in the arse, messy and involved too many steps to be considered easy. Thankfully there’s this thing called the internet and Google search.
Yes, it’s true…I too look for recipes, and ideas, on the internet. Shocking. I know. But it’s true. Anyone that tells you that they come up with every recipe by themselves, in their own little head, is lying to you. Just sayin’
So I stumbled across a homemade ice cream recipe, by Nigella Lawson, that did not require you to have an ice cream maker. You don’t even need a stand mixer for this recipe. I was sold. Well, not completely. I didn’t like her exact recipe so I changed it a bit. In her defense, her recipe is for coffee ice cream and mine is for mocha ice cream (what would Valentine’s Day be without a bit of chocolate).
On top of the cocoa I added, to give the frozen treat more chocolate flavor, I also tossed in some chunks of semi-sweet chocolate. If you really want to go crazy, and you’ve got a thing for Jamocha Almond Fudge from that famous ice cream place, you could stir in some almonds too.
While I’m calling this an easy ice cream recipe, technically it’s not ice cream. It tastes more like frozen mocha Cool Whip. Which personally, I don’t think is a bad thing. 😉 Oh, and this recipe is really easy to play around with and change up the flavor. Don’t be afraid to whip up a batch of your favorite flavor using the base recipe.
- 16 Ounces Heavy Whipping Cream
- 14 Ounces Sweetened Condensed Milk
- 2 Tablespoons Instant Espresso Powder
- 4 Teaspoons Unsweetened Cocoa Powder
- ½ Cup Semi-Sweet Chocolate Chunks (or chips)
- Add the first 4 ingredients together in a large bowl.
- Whisk until soft peaks form. You can do this in a stand mixer, with a hand held mixer or with an actual whisk by hand.
- Fold in chocolate chunks.
- Pour mixture into a freezer safe container.
- Freeze for at least 6 hours.

But could I use an ice cream maker?
Hi Donna, this recipe wasn’t designed to be made in an ice cream maker. If you did make it in an ice cream maker it would be really heavy. This is one to just whip up on the counter then pop it into the freezer. Yumm-o. However… I DO like the idea of spreading ice cream in a pan and then cutting out hearts and then covering them with homemade magic shell. I suppose it just shows that I have no class when it comes to Valentine’s Day.

Ice cream always works for me, no matter what the season. This looks terrific. I get loads of ideas for recipes from the internet, although more from cookbooks. Anyway, this is good stuff — thanks.
