Healthy Snack Ideas – Coconut Curry Cashews

A small handful of almonds is a healthy snack idea but let’s face it, that can get pretty boring. We all know that nuts are a great thing to add to our diets, but mindless snacking on those roasted and salted buggers can sure put a crimp on your daily calorie intake too. So what’s a girl to do? These coconut curry cashews are slightly sweet and have just a wee bit of salt on them, which makes them a great snack for on the go that won’t break the bank or your waistline.

The protein and fats found in nuts make them a  great snack because not only will they fill you up faster, but they’ll stay with you a lot longer than some random candy bar or a handful of cheddar cheese crackers will.

These coconut curry cashews came about because of one of those “impulse buys” at the grocery store. I was getting ready for my parents visit and loading up the grocery cart and heading to the checkout. While I was standing in line, I saw a container of coconut curry cashews and immediately thought they sounded delicious and dropped the package in my cart. When I got home, I tore into the plastic and jammed a couple straight in my mouth – “frozen food be damned…I’m eating cashew nuts.” I was immediately saddened with my purchase. The nuts were coated in some sickeningly sweet faux coconut curry tasting soft candy coating. They eventually disappeared, but I didn’t eat any more of them. Into the kitchen I went.

This recipe for coconut curry cashew nuts is exactly what I was looking for that day. I started with raw cashews so I could toast them up to a crunchy goodness while adding their coating of actual coconut and curry powder (none of that candy stuff). They only take a few minutes to make and their not even messy to whip up.

If coconut and curry are two of your favorite flavors, and you’re looking for some healthy snack ideas, I highly recommend these. But look out…they are highly addicting. 😉

Healthy snack ideas are always a hit and these salty sweet coconut curry cashews hit all the right notes. Cashew nuts lightly toasted with coconut and curry.

Ingredients
  • 2½ Tablespoons Sweetened, Flaked Coconut
  • 1 Teaspoon Coconut Oil
  • ½ teaspoon curry powder
  • Good Pinch of Fine Sea Salt
  • ¾ Cup Raw Cashews
Instructions
  1. Pre-heat oven to 350 degrees Farenheit.
  2. Grind coconut into very fine pieces (just before it turns to powder, stop grinding).
  3. In a medium sized bowl combine coconut oil, curry powder, sea salt, ground coconut and mix to thoroughly combine everything.
  4. Toss the cashews into the bowl and toss them around to make sure they are good and coated with the coconut mixture. (I used my hands for this because it makes it a lot easier.)
  5. Dump and spread the cashew nuts onto a large baking sheet and arrange them into a single layer.
  6. Bake for 5 minutes then toss them around on the pan and bake for another 3-5 minutes or until slightly golden brown and you can't resist the aroma anymore.
  7. Remove from oven and let cool before shoveling them into your mouth.
Notes
You could also use this recipe on peanuts or almonds. Just make sure you start with raw nuts or you'll have overly toasted nuts...and no one likes that.
