When it’s hot you want something to cool you down, right? Lime, mint, and ice are three things that will get you there quick. Why not add a splash of vodka to the mix to really make things fun? This little vodka cocktail recipe will definitely cool you off on those hot days of summer and won’t leave you with a coating of sugar in your mouth like you’ve been eating hard candy all day. Just light, clean, and refreshing.
Everyone knows the mint and lime combo from mojitos, but sometimes you don’t want the heavy taste you get from rum…so that’s why I made a vodka cocktail out of this. The vodka keeps this drink really light…maybe a bit too light. Yes, it’s really easy to drink a bunch of these when it’s hot outside. I don’t recommend doing that for a whole host of reasons, but since this drink is mostly made up of alcohol and only a bit of lime juice as a mixer, things can go from real fun to real crazy real quick.
I love to make this quick little cocktail. Since I usually have a mint shrub growing right outside my back door, I’ve got all the mint I could ever want, or not want. (Make sure to always plant mint in a pot or it will take over your world and you’ll never be able to get rid of it short of using a flame thrower to destroy it.)
Do you ever just play around with your liquor cabinet and come up with new cocktails? You know…add a bit of this thing you like to that thing you like, stir it all up and see what you’ve got? You really should try it sometime. Working with spirits and all the little bits and bobs that go with them to make your favorite cocktail recipes is a lot like cooking. Let’s face it, you’re probably not going to kill anyone by mixing up a cocktail that doesn’t taste good. The worst thing that can happen is that it tastes bad, you spit it out, and start over again. But I’m guessing you won’t have to completely toss the drink. Lots of times a drink can be fixed with just the tiniest of tweaks.

- 1 Large Lime (cut into quarters)
- ½ Cup Fresh Mint Leaves (packed)
- 1-2 Tablespoons Simple Syrup (sweetness is up to you)
- ½ Cup Vodka
- Add first 3 ingredients to cocktail shaker and muddle and mash them to bits.
- Once everything has been mashed up, fill the shaker with ice and add the vodka.
- Cover and shake until you have no more feeling left in your hand.
- Strain into 2 cocktail glasses.
