Easy No Bake Energy Bites

These easy no bake energy bites are the perfect little pick me up anytime of the day. They may be small, but they’re packed with lots of flavor and good for you things.

I realize I’m a little late to the energy bites party. But I’ve been busy stuffing my face with all kinds of fattening, not that healthy for you things as of late. Which is why the Mr. and I have been on quite the healthy bender this month. Workouts, no drinking and eating lots of good for you vegetables and grains. LOTS of vegetables. These healthy little energy bites have been my pre-workout saving grace through all of this.

When I finish a workout, I’m hungry! I need something that I can grab and eat right away or I’m going to just start devouring anything I can get my hands on. Apples are a great grab and go snack, but since they’re missing protein I find myself hungry pretty soon after finishing one. A fresh smoothie would be great, but I don’t want to take the time to make and clean up after that.  The seeds and nut butters in these little energy bites are just enough to cut that hunger pang.

This simple energy bites recipe is full of Fall flavors

Since it’s getting into Fall and everyone seems to be going bonkers over the return of pumpkin spice EVERYTHING, I thought I’d put a little bit of Fall into these energy bites too. Yes, they’re pumpkin spice flavored. But I didn’t forget about you chocolate lovers either. There might just be a few dark chocolate chips in these to soothe that sweet tooth of yours.

The thing that’s really great about this energy bites recipe, is that you can change it up to your tastes. I use rolled oats as a base and cashews and dates to hold it all together. After that, it’s pretty much anything goes. Oh, the cashews are ground up so you could swap out any ready made nut butter you like.

So whip up a batch of these energy bites and you can skip your afternoon cookie for something a little better for you and you might just be motivated enough to jump on the treadmill too. Or not.

This easy no bake energy bites recipe is the perfect snack or pre/post workout food. They taste so much better than those energy bars too.

Ingredients
  • ½ Cup Roasted and Mashed Butternut Squash
  • 6 Medjool Dates (pitted)
  • 2 Heaping Teaspoons Raw Cashews
  • ¼ Cup Pumpkin Seeds (or sunflower seeds)
  • 1 Cup Rolled Oats
  • ¼ Cup Chia Seeds
  • ⅓ Cup Unsweetened Coconut Flakes
  • ⅓ Cup Dark Chocolate Chips
  • ¼ Teaspoon Cinnamon
  • ¼ Teaspoon Nutmeg
  • ¼ Teaspoon Ginger
Instructions
  1. Toss the first 3 ingredients into your food processor and buzz until it turns into a thick paste.
  2. Add the squash/date paste to a large bowl and add the rest of the ingredients.
  3. Use your hands to mix everything together really well.
  4. I popped the bowl into the fridge for 30 minutes to let everything kind of come together before rolling the mixture into 1½" balls. (I find this helps to make the rolling a lot easier)
  5. Place the balls in a sealable container in single layers separated by wax paper.
  6. These will keep a good 2 weeks in the refrigerator.
Notes
You can serve this cold or at room temperature.

I haven’t made energy bites, but I get inspired when I see them. These look great! Love the butternut squash in them. They’d make a great breakfast on the go.

Lisa, these are pretty good “on the run” breakfast food. My husband and I ended up eating most of them that way. LOL

Energy balls I used to think were so airy fairy, healthier-than-thou things. Then a friend gave me a bliss ball and I was hooked. How could anything that tasted that good be healthy? 🙂
