Luscious Spring Green Salad

This lush Spring green salad goes beyond just your ordinary bowl of lettuce topped with some random dressing. This is an all green salad…as in everything in it is green. So Spring! All those fresh Spring vegetables are topped off with a tangy cilantro dressing.

Right now I’m completely obsessed with green salads. I don’t know if it’s because it’s getting warmer and I’m starting to freak out about my summer clothes not fitting or if it’s because I’m finally able to get my hands on some nice fresh local produce (boy I miss living in California). But I’m having a really good time experimenting with all the “new” produce I’ve got at my disposal.

This green salad is a monster of a salad. This ain’t no piddly little side salad. Nope, this thing is loaded with pretty much anything green I could get my hands on (including the salad dressing).

While I’m going to give you a (sorta) recipe for this salad, there’s plenty of room to improvise. I used butter lettuce as the base of this salad and then added sugar snap peas, asparagus, pea shoots, parsley, dill, green onions and avocado. But you could use a different lettuce for the base and add or subtract any of the other green ingredients depending on what looks good to you. I really like the look of the all green salad, but you could toss in a little radicchio for some color and bitterness or maybe some chopped up red endive. The possibilities are really endless.

If you want to make this into a main course, instead of a side dish, you could add in some chopped chicken breast or even some shrimp.

But do yourself and make yourself at least one all green salad. I think you’ll be surprised by how delicious it tastes and all the different textures from the vegetables.

This luscious green salad goes beyond a bowl of lettuce. This green salad is chock full of Spring vegetables and topped with a tangy cilantro dressing.

Serves: 2
  • For the Salad Dressing
  • Large Handful of Cilantro
  • 1½ - 2 Tablespoons Lemon Juice
  • 2 Tablespoons Apple Cider Vinegar
  • 2 Tablespoons Raw Pumpkin Seeds
  • 1" x 2" Chunk of Red Onion
  • ¼ Cup Olive Oil
  • Kosher Salt
  • Freshly Ground Black Pepper
  • For the Salad
  • 1 Head Buttercrunch Lettuce (torn to pieces)
  • ½ Pound Snap Peas (cut in half)
  • ½ Pound Asparagus (cut and blanched)
  • ½ Package Pea Shoots
  • ½ Avocado (cubed)
  • 4 Green Onions (chopped)
  • Handful of Parsley (leaves torn)
  • Small Handful of Dill (leaves torn)
  1. For the Salad Dressing
  2. Drop all of the salad dressing ingredients into a blender and blitz until smooth. Then pop into the refrigerator to chill.
  3. For the Salad
  4. You can either drop all of the ingredients into a big bowl and give everything a toss before plating or you can arrange the ingredients on the plate as you go. (Just start with the lettuce first.) It's all really up to you.
  5. If you want to add a little more texture, while keeping things green, you could add in some pistachio nuts.

That salad’s lovely and I’m glad you didn’t name it like the salad I saw today on Pinterest. It was called, “Plant based salad.” Of all the things you could name a salad! She should have copied yours. 🙂

Thanks Judy! We eat TONS of salads around here. I thought I’d start putting more of them out there because I think you’re not alone in getting stumped when it comes to salads. We’ve all got our tried and true’s that we use all the time. 🙂
