Grilled Jalapeño Pineapple Guacamole

A classic guacamole recipe is always a welcome site on the dinner or party table right? Who doesn’t love slathering that rich, delicious guacamole on chips, tacos, barbacoa or just digging in with a spoon? It’s pure comfort food. But sometimes you want something familiar, but a little different. This grilled jalapeño pineapple guacamole is just that different bowl of guac that you won’t be able to get enough of.

California Avocados reached out to me and asked me if I’d be interested in receiving a box of avocados. A completely innocent question/e-mail right? Let’s just say that my response sounded something like a Hannah Barbera cartoon response (yep…I’m a total professional). While my e-mail response may have come across as slightly professional (I think I said something to the affect of “will I sound totally desperate by answering your email in less than 2 minutes after receiving it and you are totally SAVING me from Texas’ complete lack of CA avocados?”), trust me when I say that voice that ran through my head as I was typing it sounded like Fred Flinstone’s cry of Yabba Dabba Doo. I love California Avocados and can only get avocados from Mexico here in Texas.

Opening that box of avocados was like a care package from home. Yes, I totally miss living in California.

Grilled Jalapeño Pineapple Guacamole

So I decided that I needed to make something that was a little more special that your regular guacamole (not that there’s anything wrong with that), because this was a bit of a celebration.

We’ve really been enjoying pineapples around here lately and grilled pineapple is amaze-balls. So I decided that I’d grill up a little jalapeño and pineapple for this guacamole recipe.

Guacamole is really one of those dishes that isn’t so much about a recipe as it is about your taste. (Yes, I’ve included my recipe in this post.) But some people want their guacamole hotter than I do, some want it more garlicky and some with less lime. So don’t feel as if you have to follow this recipe to a T…make it your own. As you’re putting it together, taste it and change it to what your preferences are.

This is actually the first time I’ve posted a guacamole recipe on the site. Not that I don’t eat it on a pretty regular basis. But I also like to make avocado dressings, avocado ice cream, avocado fries and a crema that can be spooned over dishes.

So I hope you enjoy this grilled jalapeño pineapple guacamole as much as we did. For serving it at a party, and making it look extra nice, simply serve it in the hollowed out bottom of the pineapple like I did. It really makes a nice presentation and it’s one less dish you have to wash. (WOO HOO!)

A little spicy, a little sweet, this guacamole recipe will change up your dinner plate...it's not your usual guacamole. It's better!

Serves: 2 cups
Ingredients
  • 1 Jalapeño Grilled
  • ½ Jalapeño
  • ⅔ Cup Grilled and Chopped Pineapple
  • 3 Avocados
  • 2 Tablespoons Cilantro, chopped
  • 1 Tablespoon Lime Juice
  • Healthy Pinch of Kosher Salt
Instructions
  1. After grilling the jalapeño, stem it and chop it into small pieces.
  2. Chop the fresh ½ jalapeño also into small pieces. For less heat, remove the rib and seeds.
  3. Add the ingredients to a large bowl and mash with the back of a fork. (If you've got a molcajete you can use that instead.)
  4. Mash and mix everything until you get the consistency you want. (I like my guacamole a little on the chunky side, so I leave some bigger pieces of avocado in it.)
Notes
This recipe, as it's written, isn't very hot. If you want to make it hotter, add more jalapeños. Fresh will give it more crunch, grilled will give it more of a smoky flavor.
Oh, and pineapple juice helps to keep it from turning brown, but still cover the top of the guacamole with a piece of plastic wrap before putting the cover on it when you store it.
