Cilantro Lime Shrimp

Cilantro lime shrimp is the perfect hot weather light meal. Lightly sauteed shrimp with tangy lime, garlic and cilantro sauce is a snap to make.

Want to get dinner on the table in less than 30 minutes? This is your “go to” dinner recipe. Not only is this cilantro lime shrimp quick and easy to make…it’s ridiculously delicious. I mean, what’s not to like (unless you don’t like cilantro)? Garlic, lime and cilantro seem to be a perfect combination and add those things to shrimp and you’ve got a super light and tasty dinner.

This dinner recipe is really versatile too. I served this with some coconut rice, but you could serve it with a salad or tortillas and all the fixings for tacos. Oh yeah, it also tastes great hot or cold. Talk about versatility!

Eating light-Cilantro Lime Shrimp

You’ve gotta love shrimp recipes right? It’s a nice and lean protein, it cooks up really quickly and it’s got a built in gauge to tell you when it’s done (isn’t Mother Nature brilliant?). I especially like how you can add so many different flavors to shrimp depending on what your mood is.

One of the other great things about this recipe is the cilantro sauce that gets drizzled over top of the shrimp. This is the perfect time to use up that ragged bunch of cilantro that you have in the fridge. You know, the one that’s more stems than leaves. Since you’re going to be pureeing the cilantro, the stems are fine for this recipe. The cilantro sauce recipe makes plenty of sauce, so you can go nuts with slathering it all over the shrimp and still have some left over. I’ve been using the leftover cilantro sauce as a salad dressing (just thin it out a bit with some apple cider vinegar), I’ve brushed it on chicken and used it to dress up beef tacos. No leftovers!

Ingredients
  • For Cilantro Sauce
  • Large Handful of Cilantro
  • 1½ - 2 Tablespoons Lemon Juice
  • 2 Tablespoons Raw Pumpkin Seeds
  • 1" x 2" Chunk of Red Onion
  • ¼ Cup Olive Oil
  • Kosher Salt
  • Freshly Ground Black Pepper
  • Cilantro Lime Shrimp
  • ½ Tablespoon Coconut Oil
  • 4 Garlic Cloves (grated)
  • Zest and Juice of 1 Lime
  • 1 Pound Peeled and Deveined Shrimp
  • 1-2 Tablespoons Chopped Cilantro
Instructions
  1. For Cilantro Sauce
  2. Add all ingredients to a blender (salt and pepper to taste) and blitz until sauce is smooth. Set aside.
  3. Cilantro Lime Shrimp
  4. Melt oil in a large skillet, over medium high heat.
  5. Once oil has melted add the garlic, lime zest and juice to the pan.
  6. Stir mixture and once it begins to bubble add the shrimp.
  7. Cook just until the shrimp turn pink on both sides.
  8. Sprinkle with chopped cilantro.
  9. Remove shrimp to serving platter and drizzle with cilantro sauce.
  10. Serve.

Doesn’t this look pretty! I love the flavors of cilantro and lime with these shrimp but we’d call them prawns. 🙂

Hi Maureen, cilantro and lime go together so well. I use that combo on so many things. I miss the Aussie prawns I had when I was there. 🙂
