Spiced Pork Tenderloin

Sometimes you just want to something different for dinner. This spiced pork tenderloin is not only a change from your usual dinner, but it’s easy to make and can be on the table in under a half an hour. Oh yeah, pork tenderloin is healthy too.

We eat a lot of chicken salads around here. Not the mayonnaise-y type, but sliced chicken on a huge bed of vegetables. (We need something to offset the goodies and not so healthy stuff I make around here.) But I’ll be the first to admit that they get pretty boring. Sure, sometimes I mix things up by tossing a steak on the greens, but even that can add to the tedium of eating some of the same flavors so much. Enter the pork tenderloin.

One of the things I really like about a pork tenderloin is that it comes in a manageable size, usually no bigger than two pounds. It also cooks up really quickly. If you’ve read my blog for any amount of time, you can see that I’ve got a soft spot for pork tenderloin (since I’ve got so many different recipes on here). I’ve covered it in sticky masala, Asian spices and kind of a Moroccan seasoning blend. This time we’re going spicy!

There aren’t a lot of spices used in this recipe because I don’t know about you, but I’m up to my neck in stuff that’s going on and I just can’t be bothered with a 15 item long list of ingredients to cook a simple piece of meat. I need stuff that’s quick and delicious in my life right now. This spiced pork tenderloin fits that to a T.

The most difficult part of preparing this is starting it in a pan and finishing it in the oven. Really, that’s as complicated as it gets. I recommend using a meat thermometer to make sure it’s done, but you can just go by cooking minutes if you don’t have a meat thermometer. It might be a little over done, but not by much and it will still be juicy inside.

One of the other great things about this pork tenderloin is that it’s really versatile. I used it on salads, tossed it in with some pasta and sauteed it with a big pile of vegetables. So I got three different meals out of one piece of meat. I consider that a MAJOR victory!

  • 1 - 11/4 Pound Pork Tenderloin
  • 2 Teaspoons Oregano
  • 2 Teaspoons Coriander
  • 1 Teaspoon Cumin
  • 1 Teaspoon Chipotle Chile Powder
  • 1 Teaspoon Smoked Paprika
  • 1 Teaspoon Kosher Salt
  • ½ Teaspoon Freshly Ground Black Pepper
  • 1 Tablespoon Olive Oil
  1. Pre heat oven to 400 degrees Fahrenheit
  2. Remove packaging from meat and set aside on a plate.
  3. In a small bowl, add all of the dry seasonings and mix thoroughly.
  4. Rub seasoning, liberally, all over the meat. Make sure you cover every surface of the meat so that you get that great flavor in every bite.
  5. Pour oil in a pan that is large enough to hold the tenderloin and heat over medium high heat.
  6. Once oil is hot, place meat in the pan and begin to sear it on all sides. This should take about 5-6 minutes.
  7. Once all of the sides are seared, lay the meat on a foiled lined baking sheet and slide into the oven. This is when you'd insert your meat thermometer.
  8. Roast for for 15-18 minutes, or until meat thermometer registers 145 degrees Fahrenheit. (This took 17 minutes in my oven.)
  9. Remove meat from oven and let rest for 10 minutes before cutting into it. This keeps all the juices from running out.
