Vegan Carrot Cake Cookies

These vegan carrot cake cookies might be missing eggs and gluten, and be good for you, but they’re definitely not missing any of that great carrot cake flavor that you love so much. The other great thing about these cookies is that you can toss them together in minutes.

I’m a total sucker for carrot cake. Which is weird since I don’t like cream cheese and most carrot cake recipes call for a mountain of cream cheese icing to be coating the beloved cake. But there’s something about the way it all comes together that I just can’t get enough of.

Easy to make vegan carrot cake cookies

There have been lots of vegan/vegetarian cookie recipes floating around lately so I thought I’d try to put a carrot cake spin on a vegan cookie recipe and I think I was pretty darn successful with it.

You get the golden raisins, walnuts and lots of carrots in each bite. Oh, and in place of the frosting there’s a light little drizzle of confectioner’s sugar glaze. But what’s the magic ingredient that holds them all together? Bananas. Those things keep turning up everywhere lately. But they really are quite fantastic at holding things together without having to add flour and eggs to some things. I suppose if I was a food blogger worth my salt, I’d go into the chemical reason why bananas are so great at being an ingredient replacement, but I’m lazy and am just willing to look at it as magic. (Can you tell I’m not much of a baker?)

Easy to make vegan carrot cake cookies

So all you carrot cake lovers out there, and I know you’re out there, get on these vegan cookies. They don’t take nearly the time to make as a carrot cake and I think they’re a great healthy substitute when that cake monster comes calling (and I think mine’s taking up permanent residence in the back of my brain). And just because they’re vegan and gluten free does NOT mean they’re flavor free. These are full of that carrot cake flavor.

These vegan carrot cake cookies are a breeze to put together and taste like your favorite carrot cake minus the fat, calories, dairy and eggs.

Serves: 9-12
  • For the Cookies
  • 2 Large Bananas (very ripe - with lots of brown spots)
  • ½ Cup Chopped Walnuts
  • ½ Teaspoon Cinnamon
  • ¼ Teaspoon Nutmeg
  • ¼ Teaspoon Allspice
  • Pinch of Kosher Salt
  • ¼ Cup Golden Raisins, roughly chopped
  • 1½ Cups Rolled Oats
  • 1 Cup Shredded Carrots (about 1 large carrot)
  • For the Icing
  • ½ Cup Confectioner's Sugar
  • 2 Teaspoons Water
  1. Pre-heat oven to 300 degrees Fahrenheit.
  2. Peel (toss the peels) and break the bananas into pieces and drop into the bowl of a food processor. Buzz until bananas have basically turned to liquid and set aside.
  3. Add the remaining ingredients (except icing ingredients) to a large bowl and stir together to get all the seasonings blended in.
  4. Pour the bananas over top of the ingredients that are in the bowl.
  5. Stir to thoroughly combine everything. (There shouldn't be any excess banana at the bottom of the bowl when it's all mixed up.)
  6. Scoop ingredients into an ice cream scoop and pack them into the scoop. Drop them onto a parchment paper/silicon baking sheet lined baking pan and gently flatten them out with your palm. (These cookies won't spread so you can put them fairly close together.)
  7. Bake for 20-30 minutes. Cookies are done when edges are slightly browned.
  8. Remove from oven and let cool.
  9. To ice the cookies, mix the confectioner's sugar and water together to form a slightly thick liquid and drizzle over top of cookies with a spoon or fork. For a thick frosting, use 1 - 1½ teaspoons of water and spread this on the cooled cookies.
  10. These cookies will last 3-4 days.

I know Greg, sounds crazy but they’re crazy good. They really taste just like carrot cake.
