How cute are these little cream wafer sandwich cookies? I finally nabbed my grandmother’s cookie recipe for my favorite Christmas cookies of all time.

YES! I scored my grandmother’s recipe for my favorite Christmas cookies – cream wafers sandwich cookies. I was so happy I did a little happy dance and couldn’t wait to make and share them with you. I know, Christmas cookies is kind of a strange thing to see on my blog. I’m the Christmas candy queen. But hey, a girl can change her mind can’t she?

Imagine my surprise when I found out that the recipe for these little cream wafers is from Betty Crocker. All these years I thought my grandmother was a cookie goddess. (Well, if you count the number of different cookies and quantities of said cookies she made every year…she was the cookie queen.) But finding out that this wasn’t some long lost hand me down recipe was as disappointing as finding out that the fat guy in the red suit with his four legged cronies was really my parents.

But even with the let down, these cream wafers are THE BEST COOKIES. They are a bit deceiving though. The recipe is super easy and doesn’t call for many ingredients at all, but if you make the tiny one’s (which is the way they are supposed to be made) you’ll be spending some time making these little angels. I promise you won’t be disappointed.

The dough is just whipping cream, butter and flour…but when those three ingredients come together, they bake up into this light and flaky cookie that will just make you smile every time you pop one in your mouth. Each side of the wafer is coated in a dusting of sugar to give that flakiness a little crunch and that goes so nicely with the simple icing holding the wafers together.

These little cream wafers are the perfect little cookie to fill out that platter of cookies you’ll be putting out for friends and family this year. The pink and green icing really make them stand out from the other cookies.

These cute little cream wafers are melt in your mouth delicious. These wafers are so addicting you'll have a hard time putting them down.

  • For Cream Wafers
  • 1 cup butter, softened
  • ½ cup heavy whipping cream
  • 2 cups sifted flour
  • sugar (for dusting)
  • For Filling
  • ¼ cup butter, softened
  • ¾ cup sifted confectioner's sugar
  • 1 teaspoon water
  • 1 teaspoon vanilla
  • red and green food coloring
  1. For Cream Wafers
  2. Pre-heat oven to 375 degrees Fahrenheit.
  3. Add butter, cream and flour to large bowl and mix until thoroughly combined.
  4. Form dough into a disk and wrap in plastic wrap or wax paper and chill in the refrigerator for at least 2 hours.
  5. Roll out, on a floured surface, ⅓ of the dough (leave the rest in the refrigerator) to ⅛" thickness.
  6. Use a 1"- 1½" round cookie cutter to cut out circles of the dough.
  7. Cover a piece of wax paper with a generous coating of sugar.
  8. Place the dough circles onto the sugar and gently press them into the sugar (be careful not to press too hard or you'll lose the circle shape). Turn the circles over and do the same thing to the other side.
  9. Place circles on a parchment paper lined baking sheet and prick with a fork 3 or 4 times.
  10. Bake 7-9 minutes (until they are puffed and just slightly golden).
  11. For Filling
  12. Add butter, sugar, water and vanilla to a mixing bowl and beat until thoroughly combined.
  13. Divide icing in half (yes it will be enough).
  14. Add red food coloring to one half of the frosting and green to the other half. Stir in coloring until you get the color you desire.
  15. Once the wafers have completely cooled, swipe on some of the icing onto one wafer and add second wafer to form a sandwich.
  16. Continue with all wafers.
These cookies actually get better tasting the longer they sit. So don't worry about them if they aren't gone the first day.
