Citrus Avocado Salad

Citrus Avocado Salad

It’s gray and gloomy outside and the temperatures are a little less (a lot less) than desirable. What’s a person to do to brighten up their day? Cut open some in season citrus. Seriously, the bright colors and sweet/tangy flavor is sure to brighten your day. This citrus avocado salad is a great way to bring some color to your table (and day) during this dreary time of year.

I love citrus year round, but this time of year is when I really kinda go crazy over it. The fruit bowl on my counter is overflowing with grapefruits, lemons, limes, tangerines etc. And my fruit trees are loaded with Meyer lemons and clementines. Yes, I’m crazy enough to grow citrus fruit in Texas. I had the trees in California and I swore I’d have them here too. It takes a little more work here, but I think it’s worth it. I love being able to walk out my door and pick fresh fruit from a tree.

Citrus Avocado Salad

This citrus avocado salad is a way to enjoy multiple types of citrus at the same time. I used blood oranges, navel oranges and red grapefruits for this salad. Guess what? You can use whatever your favorite citrus is in this salad. I joined that tangy fruit with creamy avocado – what a perfect combination! To round out the salad there’s butter lettuce some sliced cucumber and red onion.

The dressing you use on a citrus avocado salad is pretty flexible too. I’ve used just a drizzle of good olive oil and balsamic vinegar and I’ve also used this citrus balsamic vinegar dressing. It all just depends on how much time you have on your hands. Even poppyseed dressing would taste good on this salad. Just keep it simple.

I realize this isn’t so much a recipe, as it is a list of ingredients. But I think a lot of people don’t think to put fruits and vegetables together in a salad. So instead of your usual lettuce and tomato salad, break up the monotony and dreary days with this citrus avocado salad.

  5. Cut off the ends of the cucumbers and thinly slice cucumber.
  6. Thinly slice the red onion.
