Garlic Marinated Grilled Zucchini

Learning how to make grilled zucchini is easy. Learning how not to eat all the grilled zucchini before serving it is a bit harder.

Really, all you need to make grilled zucchini is a grill and zucchini, but to make the most of that zucchini, you need a few more ingredients.

We start by making this grilled zucchini taste even better by marinating it in garlic olive oil. Cuz doesn’t garlic make everything taste that much better? I’ve also used baby zucchini for this recipe because it’s the perfect size to use as a side dish.

Garlic Marinated Grilled Zucchini

After it marinates for a while, soaking in all that deliciousness, you just toss it onto a hot grill. Grilled zucchini has a lot more flavor than pan fried or even roasted zucchini because you get all that great caramelization from the hot grill grates on the skin of the zucchini. The heat from the grilling also softens the zucchini to just the right texture. Not too soggy and not to crisp.

After it comes off the grill I top it with grated Parmesan, some roasted pistachios and a sprinkle of fresh basil. These ingredients elevate the zucchini from a simple side dish to a stunning side dish.

I will admit that when I made this grilled zucchini I couldn’t stop eating it. Before I knew it, I had eaten half of the plate. It’s a miracle I got any pictures of it at all. I asked Craig to try it and the other half of the zucchini disappeared. So much for my side dish!

This garlic marinated grilled zucchini is sure to become a summer favorite side dish. There so much flavor and it's so easy to make you won't believe it.
Recipe type: Side Dish
Cuisine: American
Serves: 2-4
  • ½ cup olive oil
  • 4 cloves garlic, peeled
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 pound baby zucchini
  • Parmesan cheese
  • ¼ cup roasted pistachio nuts, shelled
  • 4-5 basil leaves, cut into a chiffonade
  1. Add the first 4 ingredients to a blender and blitz for a few seconds to break up the garlic into tiny pieces. It doesn't have to be smooth.
  2. Poke the zucchini all over with a fork so that there are holes to allow the garlic oil to penetrate the zucchini.
  3. Arrange the zucchini in a large sided dish.
  4. Pour the garlic oil over top of the zucchini and let marinate for 1 hour.
  5. Heat grill to medium heat.
  6. Once grill is hot, place zucchini onto grates and cook for 3 minutes.
  7. After 3 minutes, turn the zucchini over to cook the other side for another 3 minutes.
  8. Remove from grill and place onto serving platter.
  9. Grate Parmesan over top of zucchini.
  10. Toss pistachios onto zucchini.
  11. Finally, sprinkle the chopped basil over top of everything and serve.

This looks delicious. We grilled zucchini marinated in olive oil on our grill a few weeks ago, but with different seasonings. You’re right that the grilling adds tremendous flavor to the zucchini. That smokiness is wonderful.
