Sausage Sheet Pan Dinner

You gotta love a meal that can be completely cooked on one sheet pan. This sausage sheet pan dinner is easy to make, eat and cleanup after.

You get home from work and everyone, including you is hungry. What do you do? Order takeout? Dig through the fridge for enough leftovers to feed everyone? Or do you smartly break out a sheet pan, some veggies, a knife and a little protein and have dinner ready in under an hour?

A sheet pan dinner is your savior when it comes to weeknight eating. Just toss everything onto the sheet pan, throw it in the oven and about 35 minutes later you’ve got a complete, and healthy, dinner that will feed at least 4 hungry people.

Sausage Sheet Pan Dinner

I love recipes that only use one or two pots or sheet pans to make a meal. I hate doing dishes, so this makes my day a whole lot easier.

This sheet pan dinner uses sausage (I picked up some of my favorite chicken sausage for this recipe) links, but you could also use a round of sausage or even bone in, skin on chicken thighs. (I would use this type of chicken thigh so that they don’t dry out while they’re cooking.) I love the versatility of this recipe. I used sweet onion, red pepper, brussels sprouts and sweet potatoes for my veggies. You could use pretty much anything you like. Just make sure that longer cooking vegetables, like potatoes, are cut into small pieces so that they cook in time.

This sheet pan dinner doesn’t have a sauce on it, so it’s nice and healthy, but if you wanted to brush a sauce onto the sausages that would be delicious.

So break out your sheet pan for an easy dinner that everyone will love, especially you.

  • 1 red bell pepper, sliced
  • 1 sweet onion, cut into wedges
  • 1-2 sweet potatoes, peeled and cut into 1" pieces
  • ½ pound brussels sprouts, cut in half
  • 2 tablespoons olive oil
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon coriander
  • 1 teaspoon kosher salt
  • freshly ground black pepper, to taste
  • 4 sausage links
  1. Preheat oven to 400 degrees Fahrenheit.
  2. Add all of the vegetables to a large bowl.
  3. Pour olive oil over top of vegetables then sprinkle the seasonings over top.
  4. Mix everything together so that the vegetables are evenly coated with oil and seasonings.
  5. Spread vegetables onto a foil lined rimmed baking sheet. Make sure they are in an even layer.
  6. Arrange sausages over/into the vegetables.
  7. Bake for 35-40 minutes.
