Hot Beer Cheese Dip

Hot beer cheese dip and pretzels is the perfect game day food. This beer cheese dip is rich with the flavor of beer and has a nice tangy flavor too.

I will be the first to admit that beer cheese dip is not something you eat every day. But it’s great to have on hand when you’ve got a group sitting around watching the game. It’s truly one of those foods that you can bond over while you’re eating it. Some people will dip pretzels, some corn chips, some dip vegetables…everyone has their own thing when it comes to beer cheese dip (as I’ve come to learn).

Beer Cheese Dip

When I went back to Cleveland to watch the World Series, one of the days I spent there was spent at a bar. Yes, pretty much the whole day, 10 hours. What do you do at a bar for 10 hours you ask? Well, you eat and drink a lot, mostly we ate. One of the favorite things at our table was the beer cheese dip that was served with big soft pretzels. Apparently their beer cheese dip has been a big hit because not only is it served with the pretzels, but it’s smeared on a sandwich and comes as a dip with something else that I can’t remember.

I knew after having this dip that I wanted to re-create it at home. So this recipe is my copy of the beer cheese dip I had back in Cleveland. Since the bar/restaurant isn’t a national chain, I’m not naming it (because it just won’t mean anything to anyone outside of Cleveland).

We devoured this dip after I made it. I bought sourdough pretzels to dip because I was just too lazy to make homemade soft pretzels. I thought about making some pastrami sandwiches to smear this on but we couldn’t stop digging the pretzels into the dip and inhaling it. So I just had a lazy day and only felt like eating and not cooking anymore. It happens (a lot). But it felt like that kind of day to just eat cheese and be happy about it. Ever have one of those days?

Hot beer cheese dip and pretzels is the perfect game day food. This beer cheese dip is rich with the flavor of beer and has a nice tangy flavor too.

Serves: 1
  • 2 tablespoons butter
  • 2 tablespoons all purpose flour
  • ½ cup milk
  • ¾ cup IPA beer
  • 2 teaspoons mustard powder (I recommend Colmans)
  • 2 teaspoons horseradish
  • ½ teaspoon garlic powder
  • 14 ounces white cheddar cheese, grated
  • kosher salt, to taste
  1. Melt butter in a 4 quart pot over medium heat. Once butter has melted whisk in flour. Continue cooking for 2-3 minutes.
  2. Whisk in milk and beer and bring to a simmer. Whisk while this is coming up to a simmer.
  3. Add mustard, garlic and horseradish. Cook and occasionally whisk until mixture thickens (about 3-5 minutes).
  4. Add the cheese by the handful and whisk until each handful is melted before adding more cheese. Continue adding cheese until it's gone.
  5. Season with salt.
  6. Serve hot.
