Pear Cranberry and Walnut Salad

Butter lettuce topped with sweet pears, tart cranberries and crunchy walnuts make for a salad that’s easy to make, delicious and beautiful.

Still eating healthy in the new year or have you already fallen off the wagon? Something tells me that you’re still hanging in there, though those cravings for a glass of wine are just about killing you aren’t they (they are me)?

This little pear, cranberry and walnut salad is just the thing when you’re searching for a side dish to go along with that protein. It’s a breeze to throw together and you can’t beat the flavor combination.

Pear Cranberry Walnut Salad

I used butter lettuce for this salad because it’s my favorite lettuce. I like the sweetness of the leaves and their density. So it makes you feel like you’ve actually eaten something. Some lettuce is so light and fluffy you don’t feel like you ate anything after you’ve devoured it. I also used that champagne vinaigrette, that I posted earlier this week, to dress the salad. It’s tang goes really well with sweet butter lettuce.

There’s also a sprinkling of feta cheese on this salad. I think the salad really needed a bit of saltiness to go with the sweet and tangy flavors. You won’t find that the salad is tossed with a lot of the cranberries, walnuts or cheese. I really wanted the lettuce and the pears to be the star of this salad. The other ingredients are in there to fill in flavors and textures.

I think you’re really going to like this pear, cranberry and walnut salad so much you’ll find yourself making it often and even for guests, when you have them over for dinner. It’s just too delicious and pretty not to make it.

Ingredients
  • 1 head butter lettuce
  • ½ pear (I used a red pear for this salad but you can use any pear that you like)
  • ⅛ cup dried cranberries
  • ⅛ cup crumbled feta cheese
  • ⅛ cup chopped walnuts
  • champagne vinaigrette
Instructions
  1. Clean butter lettuce and separate the leaves.
  2. Stack leaves onto plates
  3. Slice pear into thin wedges and insert in between the lettuce leaves.
  4. Sprinkle with cranberries, feta and walnuts.
  5. Dress the salads just before serving.
Notes
You could swap out the cranberries for dried tart cherries if you like. They'll work really well in this salad too.
