Sweet Potato Chips

Sometimes you just want a sweet and salty snack that won’t burst your waistline. These sweet potato chips are just what you’re looking for.

Yes, it’s still January and you’re still trying to be good with what you eat. I know, I’m in the same boat. But sometimes you just want a crunchy snack. Well, a bag of potato chips isn’t really the best idea but you could make your own chips. Yes, really, you can make your own potato chips.

These sweet and salty sweet potato chips are just what you’re looking for to satisfy that snack craving that’s driving you insane.

I love how easy it is to make these chips. I just break out my deadly mandoline (you could use a knife) and slice a sweet potato super thin. A touch of oil and a couple pinches of salt and into the oven they go. The hardest part is waiting for them to cook. It takes a couple of hours. But that just means you can practice what all those diet gurus say and have a big glass of water or cup of tea while you’re waiting.

Making up a batch of these chips to have on hand isn’t the worst idea ever either. Because it’s a sweet potato you’re getting fiber, potassium, vitamin A, beta carotene, vitamin C and vitamin B6. And since there’s only a tablespoon of oil on these chips, you’re not getting a ton of bad for you fat either. It’s a snack that’s actually good for you.

Oh, and you don’t need a dehydrator to make these either. Just your oven set on 200. Easy Peasy!

What a neat idea! I’ve had plenty of potato chips, of course, but never made with sweet potatoes. I love sweet potatoes, and am always looking for new ways to use them. Gotta try this! Thanks!
