Did you get a new instant pot this year for Christmas? Or were you one of the lucky one’s to get it when Amazon put it on special deal? Well this chicken and lentil soup is a perfect recipe to make with your new found kitchen toy.
With a combination of cold weather and trying to eat healthy in January (paying for sins of November and December) soup is definitely one of those things to put on your menu. Well, if the soup’s not loaded with cheese that is (that can wait until February 😉 ).
This chicken and lentil soup is warm, good for you and oh so filling from the lentils. It’s got a rich flavor and a good amount of protein from the lentils and chicken.
Speaking of lentils…I don’t know if you’re aware of this or not, but lentils are really really good for you. They’re high in fiber (both soluble and insoluble), they have a significant amount of folate and magnesium, which means they help protect your heart and improve blood flow, they’re full of complex carbohydrates which means they help to stabilize blood sugar, they’re high in protein and they’re full of minerals and antioxidants like iron, magnesium and zinc along with vitamins A and C.
If you’re not familiar with what the Instant Pot is…it’s a great kitchen gadget that’s mulit-purpose. It’s a rice cooker, pressure cooker, slow cooker, yogurt maker, steamer & warmer and a saute/browning cooker. It let’s you downsize a lot of kitchen gadgets that probably don’t get used very much. But since this is an all-in-one cooker you’ll probably use the Instant Pot a lot. I’ve been using it more and more and am really liking it. I love it for it’s pressure cooker. It works a lot better than my stand alone pressure cooker.

- 3 boneless, skinless chicken breasts
- 1 pound lentils
- 1 small onion, diced
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon kosher salt
- ½ teaspoon dried oregano
- ½ teaspoon smoked paprika
- ¼ cup chopped cilantro
- 7 cups chicken stock/broth
- Add all ingredients to Instapot and stir to combine.
- Close the lid and hit the "Soup" button. cook for 30 minutes.
- Let the pressure naturally release.
- Remove the chicken and shred it, then add it back to the soup and stir to combine.
