No Churn Cherry Chocolate Chunk Ice Cream

This no churn cherry chocolate chunk ice cream is easy to make and is chock full of delicious sweet cherries and chunks of dark chocolate.

ICE CREAM!!!!! Who doesn’t love ice cream? I mean, I’m lactose intolerant and I still love ice cream. But this no churn cherry chocolate chunk ice cream is one you definitely need to make. It’s so full of cherries and chocolate, every bite is a treat.

I’m a big fan of chocolate and cherries together. Yes, I’m one of those people that can eat an entire box of chocolate covered cherries. I regret it later when my belly hurts, but they just taste so good. So this ice cream was a natural fit for me. I’m also a fan of Ben and Jerry’s Cherry Garcia, which is what really inspired this recipe.

I was too lazy to want to break out my ice cream maker so I went the no churn route and the resulting ice cream turned out perfectly! So those of you who thought you had to go out and buy yourself an ice cream maker don’t have to rush to the store to get one. The only real equipment needed to make this recipe is a mixer. And I used my hand mixer for this…not my stand mixer.

No churn ice cream uses sweetened condensed milk and heavy whipping cream to get that creaminess you expect out of ice cream. So it’s not dairy free. But it does have that silky texture that you expect when you take a bite. But then you get all the cherries and chocolate chunks and your mouth gets really really happy. I used dark chocolate when I made mine, but you could use milk chocolate if that’s what you prefer.

Craig and I went a little crazy when we were eating this no churn cherry chocolate chunk ice cream. The flavors are really intense. Especially the cherries, since they’re in season right now. I left the cherries in pretty big pieces, but you could chop them into smaller pieces if you like. That would give the ice cream a bit more of the pink color you might be looking for in a cherry chocolate ice cream.

Break out that mixer and get ready to pit a few cherries. This no churn cherry chocolate chunk ice cream is definitely worth the mess.

This no churn cherry chocolate chunk ice cream is easy to make and is chock full of delicious sweet cherries and chunks of dark chocolate.

Ingredients
  • 3 cups pitted and chopped cherries
  • 2 tablespoons sugar
  • 2 tablespoons bourbon (optional)
  • 2 teaspoons vanilla extract
  • 1 14 ounce can sweetened condensed milk
  • 8 ounces dark chocolate, chopped into pieces
  • 2 cups heavy whipping cream, chilled
Instructions
  1. In a medium bowl add the cherries, sugar, bourbon and vanilla extract. Stir to thoroughly combine the mixture and let it sit for 30-60 minutes. You should see cherry liquid in the bottom of the bowl. The longer it sits, the more liquid you'll get.
  2. Pour the condensed milk into a large bowl. Stir in the cherry mixture along with the chopped up chocolate. Make sure everything is well mixed.
  3. Pour heavy whipping cream into a medium sized bowl and whip until stiff peaks form. This should take about 3 minutes. The peaks are stiff when you pull the mixing blades out of the cream and the peak stands up straight.
  4. Gently fold the whipped cream into the condensed milk and cherry mixture. Keep folding until it is well blended.
  5. Pour into an 8½"x4½" loaf pan.
  6. Place the pan into the freezer for at least 6 hours.
  7. Serve.
Notes
You can use milk chocolate instead of dark if you prefer.
