Cilantro Lime Rice

This bright and zingy cilantro lime rice is a perfect pairing for all of your favorite Mexican dishes. Now you can make cilantro lime rice at home and not have to go to a restaurant to get it.

I had a recipe request from one of my lovely readers for a recipe for cilantro lime rice to pair up with that delicious grilled Brazilian flank steak. (Yes, I take requests…in fact, I love getting recipe requests from you.) This zingy rice will pair really well with this flank steak.

One of my favorite things to get at Chipotle is the cilantro lime rice. And guess what? It’s ridiculously easy to make at home. And I think it tastes even better because it hasn’t been sitting around on the steam table. It’s fresh from the pot.

Cilantro Lime Rice

The best rice to use for this recipe is long grain rice, but you can use short grain too. It’s just a bit stickier (which I prefer because I’m weird like that). But the long grain rice will give you a nice fluffy bowl of rice to sit along side your burrito. I use a good bit of cilantro in this recipe too, because I like the way that it tastes, so I want a bunch in there. But it’s not overwhelming and your rice won’t turn green from it.

You could chop up the ingredients that go into this rice but I think the blender is a little bit easier. You’ll probably have to manually stir around the ingredients a few times to get them good and chopped up (because there’s not a ton of ingredients going into that big blender) but I still think it’s easier. But if you’d rather chop everything by hand for this recipe, go right ahead. There’s not that much to chop up.

Ingredients
  • 1 cup long grain rice
  • ¾ cup cilantro (leaves and tender stalks)
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 clove garlic
  • pinch of kosher salt
Instructions
  1. Add the rice to a small pot and add 1½ cups water to the pot. Bring to a boil then cover and reduce to a simmer. Cook for 12-15 minutes or until the water has all absorbed.
  2. Remove from heat and fluff rice.
  3. Add the remaining ingredients to a blender and blitz until everything is in small pieces. You may need to scoop the ingredients around a couple of times when doing this because there's not a large quantity of stuff in the blender. You could also finely chop the ingredients by hand if you like.
  4. Stir into rice and serve.
