Cauliflower Leek Soup

This cauliflower leek soup recipe is so easy and takes just 7 ingredients. It’s ready in under an hour! This clean soup is super creamy and vegan.

While Craig is eating away on a humongous plate of mac and cheese, I am daintily slurping away on my cauliflower leek soup.  I’m currently doing my clean eating regimen to drop a few of the pounds I gained this summer while traveling around the country. Eating things like hot chicken and shrimp and grits is not a good thing to keep you in your skinny jeans. Or at least not as often as I was eating them.

One of the things that really frustrates me, isn’t the specialized eating but the fact that Craig can lose weight practically just by thinking about losing weight. I know, I know guys bodies are built differently than girls bodies are (I learned that when I was about 4 or 5 thanks to my neighbor).  Guys can lose weight much more quickly than women can.  Craig can lose 3 – 5 pounds in a week without any struggle.  I can gain 3-5 pounds in a week without struggling too.  But even with a concentrated effort, I’m lucky if I can drop 2 pounds in a week.

Cauliflower Leek Soup

This soup recipe does not make you feel like you are missing out on anything.  While the soup is all vegetables, roasting the cauliflower, leeks and garlic give it a whole new flavor than your usual vegetable soup.  Pureeing the whole mess gives the soup a creamy texture and the garlic flavor permeates the whole batch.

Not only does this cauliflower leek soup taste good, but it’s good for you too. Get this: one serving of cauliflower contains 77 percent of the recommended daily value of vitamin C! Leeks have nutritional value as well. They’re part of the onion family and provide fiber and bulk along with vitamins, minerals, and antioxidant polyphenols. How’s that for a good for you bowl of soup?

  • 1 Medium Head Cauliflower (roughly chopped)
  • 2 Leeks, White and Light Green Part Only (cut in half lengthwise)
  • 6 Cloves Garlic
  • 2 Tablespoons Olive Oil
  • 32 Ounces Vegetable Broth
  • Kosher Salt
  • Fresh Ground Black Pepper
  1. Preheat oven to 425 degrees Farenheit.
  2. Spread chopped cauliflower, leeks and garlic evenly on a baking sheet. If you use 2 baking sheets, make sure you rotate and change the shelf of the baking sheet, halfway through cooking.
  3. Drizzle olive oil on vegetables and mix well to thoroughly coat. Sprinkle with kosher salt.
  4. Roast in oven for 40-45 minutes. Vegetables should be brown on edges and slightly softened.
  5. Pour roasted vegetables into a saucepan and add vegetable broth and fresh ground pepper to taste.
  6. Over medium high heat, heat vegetables and broth until it bubbles.
  7. Using an immersion blender (stick blender), thoroughly puree all contents of the saucepan. If you don’t have an immersion blender, you can use a regular blender. Just be careful putting hot liquids in a blender as they can cause the lid to come flying off sending your yummy soup all over you and your kitchen. (You can vent the lid a little to help reduce the chance of this happening.)
