Skirt steak is a pretty tough cut of meat. Usually, to tame the tough, we cook tough meat for hours to break it down and make it tender and succulent (ewww…what a word). It’s winter and we’re all looking for some kind of hearty, rib sticking kind of dinner…what could be heartier than a big glass of dark and rich stout?
