Cool and Spicy Melon Soup
Melon soups are usually something we usually associate with the hot summer months but in this melon soup, we’ve given it a bit more body with coconut milk and given it a touch of spice with some freshly grated ginger.
- 4 Cups Casaba Melon (cut into 1″-2″ pieces)
- 3/4 Cup Coconut Milk
- 2 Tablespoons Lime Juice
- 1 Tablespoon Freshly Grated Ginger Root
- 1 Pinch Kosher Salt
Place melon cubes, coconut milk, lime juice, grated ginger and kosher salt into a food processor and puree for 1-2 minutes. Taste and add additional seasonings as desired.
Top with unsweetened toasted coconut.
*Using powdered ginger in this recipe is not recommended, as the flavoring is different. However, if it is your only option 1 Tablespoon of freshly grated ginger = 1/8 Teaspoon of ground ginger.
