Salt Crusted Fingerling Potatoes

Salt crusted potatoes are a side dish you'll gobble up. Making them is so easy because it's virtually hands free. They're perfect with roast chicken.

Serves: 2-4
  • 1½ pounds fingerling potatoes (you could also use small pee wee potatoes)
  • 1½ tablespoons kosher salt
  1. Add salt and potatoes to a large pot and Pour 2½ cups of water over potatoes. They should just be barely covered by the water.
  2. Turn heat to high and bring water to a boil.
  3. Continue boiling potatoes until all of the water has evaporated (about 20 minutes)
  4. Remove pan from heat and toss potatoes onto a plate.
  5. Serve warm or cold.
