Sometimes you just want a sweet and salty snack that won't burst your waistline. These sweet potato chips are just what you're looking for.

  • 1 large sweet potato, thinly sliced (about ⅛ inch thick) leave the skin on
  • 1 tablespoon extra-virgin olive oil
  • 2 pinches kosher salt or coarse sea salt
  1. Preheat oven to 200 degrees Fahrenheit.
  2. Line 2 large baking sheets with parchment paper.
  3. Arrange oven racks in top and bottom thirds of oven.
  4. Toss sweet potato slices with oil and salt.
  5. Spread in a single layer on the lined baking sheets.
  6. Slide pans into oven and rotate the pans top to bottom half way through the cooking.
  7. Bake for 3 hours.
  8. Cool chips on the pans before serving.
  9. Store in airtight container.
