Homemade energy bars are a healthy, portable snack you can easily make. These chewy energy bars are perfect between meals or a pick me up before a workout.

  • 1¼ cups sesame seeds
  • ¾ cup shredded, unsweetened coconut
  • ¼ cup roasted, unsalted peanuts
  • 2 tablespoons chia seeds
  • ¼ teaspoons kosher salt
  • ¼ cup maple syrup
  • 2 tablespoons creamy almond butter
  • ¼ teaspoon vanilla extract
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Line 8"x8" glass baking pan with parchment paper and make sure that you leave edges of the paper overhanging the sides of the pan.
  3. In a large bowl mix sesame seeds, coconut, peanuts, chia seeds and salt together.
  4. In a small bowl thoroughly mix together the syrup, almond butter and vanilla. Once this is blended together, pour it into the bowl of the sesame seed mixture. Then thoroughly coat the dry ingredients with the wet ingredients.
  5. Scrape the mixture into the lined baking pan and pat it into the pan in an even layer.
  6. Bake for 20-25 minutes or until edges begin to lightly brown.
  7. Remove from oven and let cool for 1 hour.
  8. Pull bars out of the pan by lifting the parchment paper and cut into 16 equal squares.
  9. Store in an airtight container.
If you can't find roasted, unsalted peanuts you can use roasted and salted peanuts. Just make sure to leave out the ¼ teaspoon of salt or the bars will be too salty.
