How to Roast Garlic

Roast garlic is one of life's great flavors and it couldn't be easier to make. Four ingredients and 45 minutes and you've got a flavor bomb for your next meal.

Ingredients
  • 2 large heads fresh garlic
  • olive oil
  • kosher salt
  • freshly ground black pepper
Instructions
  1. Pre-heat oven to 375 degrees Farenheit.
  2. Slice off the top of the garlic so that all of the cloves are exposed.
  3. Place garlic head in a piece of heavy gauge foil (or a double layer of thinner foil).
  4. Drizzle about 1 tablespoon of oil, for each head, over top of the garlic cloves.
  5. Sprinkle a pinch of salt over the cut cloves.
  6. Give the garlic a few grinds of black pepper.
  7. Twist the foil up around the head of garlic so that it's completely closed.
  8. Place the wrapped garlic on the middle rack of oven and bake for 45 minutes.
  9. Remove from oven and let cool enough so that you can open the foil.
  10. Squeeze the garlic head to remove the roasted garlic cloves.
  11. Enjoy immediately or put into a covered container and store in the refrigerator for up to one week.
Notes
If you want to roast a bunch of heads of garlic at the same time you can place the heads in a pie pan or 8"x8" baking pan. Drizzle with oil, add the salt and pepper then cover the pan with foil. Bake for the same amount of time.
