This candy buckeyes recipe might just be the first thing gobbled up when you put it out with other candies and cookies this holiday season.

  • 1½ cups smooth peanut butter (do not use all natural peanut butter with the oil on top)
  • ½ cup unsalted butter (at room temperature)
  • 1 pound powdered sugar
  • 1 teaspoon vanilla
  • ¼ teaspoon salt
  • 1 10 ounce package dark chocolate chips (at least 60% cocoa)
  1. In a stand mixer blend peanut butter, butter, powdered sugar, vanilla and salt until a dough forms (this will take a few minutes - be patient).
  2. Line a baking sheet with foil or wax paper.
  3. Take about 2 teaspoons of the peanut butter mixture and mix it and roll it into a ball.
  4. Place on lined baking sheet and continue until all of the mixture is gone (I made 56 balls).
  5. Slide baking sheet into the refrigerator for 20 minutes to chill and help solidify the peanut butter balls.
  6. Fill a saucepan with about 1" of water and place a glass bowl on top of pan (make sure bottom doesn't touch the water) and heat over medium heat.
  7. Add the bag of chocolate chips to the bowl.
  8. Stir until the chips have melted.
  9. Remove baking sheet from refrigerator.
  10. Insert a toothpick into the peanut butter ball and dip into the chocolate. Cover until there is a small circle of peanut butter still showing and drop the ball off onto the baking sheet.
  11. Continue with the remaining peanut butter balls.
  12. Let the chocolate cool.
  13. Gently work the peanut butter to cover the toothpick holes.
  14. Serve.
