Quick and Easy Appetizers: Smoked Salmon Dip and Loaded Potato Dip

As part of my November series: Easy Thanksgiving Recipes, I thought you might enjoy a couple of quick and easy appetizers you could serve your guests. When you put a lot of effort into the main dinner, it’s pretty hard to muster up more energy to go all out on the appetizers too. Instead of just picking up something frozen, to defrost and serve, why not serve something you know everyone will love: chips and dip. Of course, this isn’t just some tub of French onion dip. This chip dip is, (dare I say it) gourmet chip dip. How about a loaded baked potato chip dip and a smoked salmon chip dip? Serve these with some great tasting kettle style chips and your guests are definitely going to be happy while waiting for the main course.

I was selected to work with The Real Kettle Chips and create a chip dip that would go with their chips. Considering they have 14 flavors that run much deeper than your typical salt, barbecue or sour cream and onion this wasn’t quite as simple as I thought it would be. Craig and I are HUGE fans of The Real Kettle Chips. When we actually have potato chips in the house (I have a little self control problem around a bag of potato chips 😉 ), these are the chips you’ll find. We love them because they’re thicker than your standard potato chip and underneath their great flavors is the taste of REAL potato.

I decided that I couldn’t just create one chip dip, I had to make two. More excuses for me to buy more flavors of potato chips,  right?

Before I jump right into this first dip (loaded baked potato dip), I should tell you that both of these recipes take the concept of chip dip to another level. Instead of making them from your usual ingredients like sour cream, cream cheese or yogurt…these dips use crème fraîche as their base. Yeah, I went there. But before you panic over the cost, I used homemade crème fraîche which I will give you the recipe for.

This loaded baked potato dip is paired with The Real Kettle Chips New York Cheddar flavor – what other chip flavor would pair so well? Like all good loaded baked potatoes, this chip dip has the crème fraîche (ok, that’s not usual – usual is sour cream), ranch dressing, crispy bacon and lots of green onions.

For my second chip dip recipe I decided to go a little more over the top. Hey, when you start with a base of crème fraîche wouldn’t you expect something like that? This is the chip dip that definitely qualifies for quick and easy appetizers status. The flavors in this smoked salmon dip will blow you away. Think of this as what you WISH you had coating that morning bagel of yours.

You already know where the ingredient list starts for this smoked salmon dip, then I added horseradish, lemon, dill, chives, smoked salmon (duh) and topped it off with a little Tobiko caviar. I told you this would be worthy of “appetizer” status.

For the smoked salmon dip, the obvious chip pairings were Sea Salt and Salt & Fresh Ground Pepper flavors. Both of these chips taste great with the smoked salmon. To keep from getting overwhelmed by salt, I didn’t add any salt to either of the dips.

I hope that these two chip dip recipes help to convince you that you can serve quick and easy appetizers that your guests will love without having to resort to boxes or bags of frozen stuff. But, when serving something like chips and dips, make sure that you are using good ingredients and great potato chips.

Recipe: Homemade Crème Fraîche

Summary: Makes 2 Cups – enough for both chip dip recipes

Ingredients

  • 1 Pint Heavy Whipping Creme (can be pasteurized but DO NOT use ultra pasteurized)
  • 4 Tablespoons Plain Yogurt With Live Cultures (be sure to read the package – but most do contain live cultures)

Instructions

  1. Pour cream into a jar with an airtight lid.
  2. Add yogurt and stir to thoroughly combine.
  3. Cover jar and set in a warm place for 12 – 24 hours.
  4. You sill see it thickening up as time progresses.
  5. After 24 hours, place it in the refrigerator for up to 3 days.
  6. It will continue to thicken some in the refrigerator.

Quick notes

If it’s not thickening up, after about 22 hours, the way you would like you can place the jar in a shallow container of warm (85-90 degree Farenheit) water. This helped mine to thicken up when the last 12 hours turned chilly in my house.

Variations

Instead of yogurt, you could also use the same measurement of buttermilk.

Ultra pasteurized heavy whipping cream will work, but it takes much longer to set up.

Recipe: Loaded Baked Potato Chip Dip

Summary: Makes Approximately 1 1/2 Cups Dip

Ingredients

  • 1 Cup Crème Fraîche
  • 1 – 1 1/2 Tablespoons Powdered Ranch Dressing Mix
  • 4 Slices Thick Cut Bacon (cooked and chopped into small pieces)
  • 1/3 Cup Chopped Green Onions (plus more for garnish)
  • Freshly Ground Black Pepper

Instructions

  1. Add all ingredients to a medium sized mixing bowl and stir to thoroughly combine. (reserve a bit of the chopped bacon for garnishing the top of the dip)
  2. Cover and place in the refrigerator for at least 1 hour to let all the flavors come together.
  3. Serve with New York Cheddar Kettle Chips.

Quick notes

The measurement of the powdered ranch dressing mix is variable because some are stronger than others in flavor. I used 1 1/2 tablespoons of my recipe for powdered ranch dressing. Click on link for recipe.

Variations

If you would like to serve this with regular Salt only potato chips, you could mix in 1 cup of shredded cheddar cheese.

Recipe: Smoked Salmon Chip Dip

Summary: Makes approximately 1 1/2 Cups Dip

Ingredients

  • 1 Cup Crème Fraîche
  • 2 Teaspoons Lemon Juice
  • 2 Teaspoons Prepared Horseradish
  • 4 Ounces Smoked Salmon (chopped)
  • 3 Tablespoons Chopped Fresh Chives (separated)
  • 1/4 Cup Chopped Fresh Dill
  • Freshly Ground Black Pepper
  • Tobiko Caviar*

Instructions

  1. Add the crème fraîche, lemon juice, horseradish, smoked salmon, 2 tablespoons of the chives, all of the dill and black pepper to a medium sized mixing bowl.
  2. Stir to thoroughly combine.
  3. Cover and place in the refrigerator for at least an hour to chill and so that the flavors come together.
  4. Spoon into a serving bowl and top with remaining chives, some pieces of chopped dill and a spoonful of caviar.
  5. Serve with Sea Salt and Salt & Fresh Ground Pepper Kettle Chips.

Variations

* Top with whatever caviar you like, or you can omit this ingredient.

They used to have a Tuscan Three Cheese I think it was called that I simply adored, but it is not on their site anymore so I am guessing they unfortunately discontinued it. I do love their New York Cheddar flavor though!
