Okay, we’re at the mid-point of the summer. Are we having fun yet? Are we rocking out with our bathing suits out? Drinking lots of rosé? Well, you should be. These gloriously sunny days are passing way too quickly to let even one of them get away. But since we’re coming up on the 4th of July, and there’s picnics and parties galore, I thought I’d share one of my favorite summertime salad recipes. It just so happens that it’s a red, white and blue salad so it’s perfect for the upcoming weekend festivities. But feel free to serve it all summer long!

There are lots of red, white and blue salads that come up around July 4th (natch), but many of them have vegetables in them. That’s fine, but I prefer my party salads to be on the sweeter side so mine is made with fruit and tossed with a lemon, honey and mint dressing.

I make this salad as soon as watermelon comes into season. I can’t eat plain watermelon (I know, I’m strange) but mix it up with other stuff or blend it up into a cocktail recipe and I’m all set. Especially if it’s been sitting in the fridge getting nice and icy cold. How good is that? This salad is especially good when it’s ice cold, but even if it’s at room temp it works great. (Yes, I wouldn’t add the goat cheese if you’re going to be at an outdoor party and it will be sitting around for a long time…that can lead to nothing good.)

This red, white and blue salad is so easy to make too. I’ve given you a recipe, but you can really kind of wing it on the quantities. If you really, really, really like watermelon and want more of that in there – great, do that. If you like it heavier on the blueberries, that works too. Since the dressing ingredients are all in equal amounts, you can play around with the quantity of dressing you want to make. Also good to remember is that watermelon is a really juicy fruit and will continue to leak juices into your bowl (diluting the dressing a little bit). So just keep that in the back of your brain while your fiddling around with quantities. I like the addition of the sweet watermelon juice with the dressing. I think it give the dressing another flavor dimension.

So dress yourself up in some red, white and blue. Dress your house up in some red, white and blue. And DEFINITELY dress your table up with this red, white and blue salad.

This red, white and blue salad will look patriotic on your July 4th table. Sweet fruit meets tart goat cheese with tangy lemon, honey, mint dressing.
Recipe type: Salad
Cuisine: American
Serves: 6
  • Dressing
  • ¼ Cup Honey
  • ¼ Cup Lemon Juice
  • ¼ Cup Mint, chopped or chiffonade (cut into fine strips)
  • For the Salad
  • 8 Cups Cubed Watermelon
  • 2 8 Ounce Packages Blueberries
  • Plain Goat Cheese
  1. Dressing
  2. Add the honey and lemon to a bowl and whisk to combine. Set aside.
  3. For the Salad
  4. Toss the watermelon and blueberries into a large bowl and stir, gently, to combine.
  5. Chill in the refrigerator until just before serving.
  6. Add the fresh mint to the fruit.
  7. Stir and pour the dressing over the fruit and gently toss to coat.
  8. Sprinkle the goat cheese on top of the salad.
  9. Serve.
You could also add strawberries to this salad for even more flavor...and of course more red.
