Greek Tortellini Salad Recipe

So quick and easy Greek tortellini salad is loaded with vegetables and cheesy tortellini. It’s all topped off with a zesty lemon vinaigrette. Perfect for Summer!

I don’t know about you, but I’m looking for easy recipes that don’t require a lot of cooking right now. The temperature is rising and I don’t want to be standing around in a hot kitchen dealing with cooking food. I want to be out by the pool or anywhere other than the kitchen.

This Greek tortellini salad is one way to make that happen.

I used spinach tortellini filled with ricotta cheese for this recipe, but you could use regular tortellini with ricotta cheese. I like the green color of the pasta mixed in with all of those veggies. Then I loaded the bowl with vegetables like tomatoes, red onions, and cucumbers. When I served this, I ended up adding an avocado to the salad and it was delicious! The whole thing gets topped off with a zesty lemon vinaigrette which is a snap to throw together then you just shower the top with crumbled feta cheese.

You could definitely add olives to this salad. They’d add a nice briny/salty touch. I left them out because we don’t really like olives all that much around here. Kalamata olives would taste best in this, but if you don’t want to deal with the pits, just toss in some sliced black olives. They’ll blend into the salad a bit better than green olives would.

Making this Greek tortellini salad couldn’t be any easier. While the pasta is boiling (for all of about 3 minutes) you can be chopping up your vegetables. Toss the cooked tortellini into a colander and rinse with cold water to cool it down. Once it’s cooled down you can add the pasta to the vegetables. Whip up the dressing and pour it on while the pasta is still slightly warm. The pasta will absorb some of the dressing when it’s still a bit warm as opposed to when it’s completely chilled down. Mix everything up and pop the bowl into the fridge to chill.

Serve the salad in bowls with bread sticks and you’ve got yourself a great summertime dinner.

Serves: 2-4
  • 1 8 ounce package spinach tortellini
  • 1½ cups grape tomatoes cut in half
  • 1¼ cups diced cucumber
  • ½ cup diced red onion
  • ½ cup crumbled feta cheese
  • For the Dressing
  • ¼ cup fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh oregano, chopped fine
  • kosher salt
  • freshly ground black pepper
  1. Cook the tortellini in well salted water according to package directions. Drain and run cold water over the pasta to cool it down.
  2. Add all of the vegetables to a large bowl then toss in pasta.
  3. For the Dressing
  4. Add all ingredients to a small bowl and whisk to thoroughly combine.
  5. Pour dressing over salad.
  6. Toss the salad to coat the ingredients in the dressing.
  7. Top with crumbled feta cheese.
  8. Place bowl in the refrigerator and chill for at least 2 hours before serving.
The serving size depends if you're serving this as a side salad or as a main course.

I made this for a 4th of July picnic and it was a big hit! I don’t like olives, either, so I added some capers.
