Kicked Up Macaroni Salad

This kicked up macaroni salad may not be traditional, but it sure is delicious! It still has lots of crisp veggies, but there’s a tasty little surprise in here.

The summer celebrations are on a roll aren’t they? And I’m not just talking about the one’s where there’s a huge gathering. I’m including those that just involve family too. Summertime is when you get to serve light and easy foods outside and make any meal feel like a party.

We’re finally getting a little break in the heat here (it’s only in the low 90’s instead of the mid to upper 90’s) and I’m really enjoying it. It means I can actually sit by the pool and not have to get in the pool without feeling like a frying sage leaf. I might even get a little bit of a tan this week. Or as much of a tan as a redhead can get. LOL

Kicked Up Macaroni Salad

I was having cravings for macaroni salad this weekend and just couldn’t get it out of my head…or belly. I whipped up a batch of my usual macaroni salad with a bit of a kick. I added some thin sliced salami to the mix for a bit of a kicked up macaroni salad.

We had this as a side dish for a couple of meals and as a light lunch. With the salami in there, you get a nice punch of protein along with those macaroni carbs, and crunchy vegetables. So it kind of balances everything out a little bit. I didn’t feel quite as guilty about eating a larger than usual portion since the meat is in there. 😉

I used some of that good salami (I used Volpi Genoa Salami) that’s thinly sliced and comes in the vacuum packed package that hangs in the specialty deli section of your grocery store. I like that it’s thinly sliced so when I slice it up it becomes thin strips in the macaroni salad and just adds that little bit more flavor to the salad.

Enjoy this easy to make macaroni salad and wait for the compliments to roll in. (But remember that this is a mayo based salad, so you don’t want to leave it out in the hot sun.)

Serves: 8-10
  • 2 cups dry Ditalini or Small Elbow Macaroni
  • 1 cup finely chopped celery
  • ½ cup finely chopped red onion
  • ½ red pepper, finely chopped
  • 1 5 ounce package salami sliced into thin strips
  • ⅔ cup mayonnaise
  • ¼ cup Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon kosher salt
  • ½ teaspoon paprika
  • ½ teaspoon freshly ground black pepper
  1. Cook pasta according to package directions then drain and rinse. Allow to cool somewhat.
  2. Add vegetables and salami to bowl.
  3. Toss the pasta into the bowl with the vegetables and salami.
  4. Add the remaining ingredients to the bowl and stir to combine. Make sure that everything is well coated.
  5. Place into refrigerator for at least 2 hours before serving.
