Chile Cilantro Lime Posole

This easy chile cilantro lime posole comes together in 30 minutes. You can have a hearty dinner on the table in no time.

If you haven’t guessed, it’s soup week on MyMansBelly. It’s finally cooled off at night around here and I’ve been busting out soup every night for dinner. Craig thinks I’m crazy, but I just love soup and soup weather!

When we went on our little trip to the Hatch Chile Festival in Hatch, New Mexico we stopped off in a little town not far from Hatch, called Mesilla. We actually went there twice. The first time we went to check out the town square and the little market they had going on there. We also stopped into Vintage Wines to check out some of the local libations. Not only did they serve wines, some of them locally grown, but they had quite the selection of local beers. One of which was a pecan beer. Yes, you could taste the pecans in the beer.

The next time we stopped back in Mesilla it was to get some lunch after visiting Almagorda White Sands. Since it was Labor Day, most of the restaurants we were looking to go to were closed. We happened to run into a barista on her way to work and got a recommendation for Josefina’s Old Gate Cafe in Mesilla. She recommended the chile cilantro lime posole. Off to Mesilla we went and ordered a big bowl of the posole. It was delicious.

As soon as I tried it, I knew I was going to re-create it at home and I think I’ve come pretty darn close.

This chile cilantro lime posole is really easy to put together and yes, you really can have dinner on the table in 30 minutes with this. It’s loaded with Hatch chiles, hominy (which is corn), chicken, cilantro and a healthy splash of lime juice. All of the ingredients should be readily available at your local grocery store. The Hatch chiles are sold in cans at the stores now…so you can make this soup even when they’re not in season.

Whip up a batch of this warm and comforting posole. You’ll want to snuggle up on the couch while you’re eating this yummy bowl of goodness.

This easy chile cilantro lime posole comes together in 30 minutes. You can have a hearty dinner on the table in no time.

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 4 medium cloves garlic, minced
  • 1 can Hatch chiles (or ⅓ - ½ cup diced,seeded fresh roasted chiles)
  • 1 pound chicken tenders, cut into small pieces
  • 1 25 ounce can hominy, drained
  • 1 teaspoon dried oregano
  • 1 quart chicken stock
  • 5-6 tablespoons fresh lime juice
  • kosher salt
  • freshly ground black pepper
  • cilantro
  1. Add olive oil to 5-6 quart stockpot. Heat over medium heat.
  2. Once oil is hot, add onions and saute for 5 minutes. Keep stirring them so they don't burn.
  3. Add the garlic and chiles. Cook and stir for another 2 minutes.
  4. Add the chicken, hominy, oregano and chicken stock to the pot and give everything a good stir.
  5. Bring to a low rolling boil and cook for 10 minutes.
  6. Take posole off the heat and remove the chicken. Using 2 forks, shred the meat then add it back to the pot.
  7. Stir in the lime juice and add salt and pepper to taste.
  8. Add cilantro leaves to the top of the bowls just before serving.
  9. Serve.
You can also add diced avocado to this soup just before serving. And definitely serve it with good flour tortillas to sop up all the goodness.
