Kale and Cranberry Salad

New Year’s resolutions to eat better don’t taste much better than this kale and cranberry salad. It comes together in minutes and is healthy and filling.

It’s the new year. Are you feeling it yet? You’re no doubt feeling the freezing temperatures that have most of the country on lock down right now. It’s even below freezing here in Texas and is supposed to be for 3 days straight. Yikes! I’ve got my little heater running under my desk trying to stay warm.

I don’t know about you, but every year I pledge to eat healthier. I do eat relatively healthy all year, but at the start of every new year I really take it up a notch and eat super healthy. I think it helps me to stave off the flu and colds that everyone around me seems to get. Of course obsessively washing my hands might be a better reason for that. But I like to think it’s the healthy eating.

Kale and Cranberry Salad

This kale and cranberry salad is a great way to kick off your healthy eating in the new year. It’s packed full of delicious stuff, so you don’t feel hungry after eating it. (Like you can with some salads.) It’s got kale, of course, but then there’s dried cranberries for a touch of sweet/tart, some crunchy roasted pumpkin seeds and a topping of salty feta cheese. The dressing uses in season oranges along with some white wine vinegar and shallots.

If you don’t have, or can’t find, roasted pumpkin seeds swap them out for toasted sliced almonds. Those will also give you a nice toasty crunch for this salad.

I can sit down and eat this whole bowl for lunch, but it will easily serve 4 as a side salad.

Serves: 1-4
  • 1 bunch curly kale
  • ⅓ cup dried cranberries
  • ¼ cup roasted pumpkin seeds or toasted sliced almonds
  • ¼ cup crumbled feta cheese
  • For the Dressing
  • 2 tablespoons fresh squeezed orange juice
  • 2 tablespoons white wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • ½ shallot, thinly sliced
  • kosher salt
  • freshly ground black pepper
  1. Remove the ribs from the kale and thinly slice it into ribbons. Toss into large bowl.
  2. Toss in the cranberries and pumpkin seeds.
  3. Sprinkle the top with the feta cheese
  4. For the Dressing
  5. Add all ingredients to a small bowl and whisk to combine.
  6. Pour over top of salad and toss to combine.
  7. Serve

I’ve never combined cranberries with kale. What a neat idea! This looks good. And I really do need super healthy at the moment. 🙂

Hi John, the cranberries sweet/tart tastes really good with the bitter kale. I’m right there with you on needing the healthy stuff right now.
