Red White and Blue Salad

- Dressing
- ¼ Cup Honey
- ¼ Cup Lemon Juice
- ¼ Cup Mint, chopped or chiffonade (cut into fine strips)
- For the Salad
- 8 Cups Cubed Watermelon
- 2 8 Ounce Packages Blueberries
- Plain Goat Cheese
- Dressing
- Add the honey and lemon to a bowl and whisk to combine. Set aside.
- For the Salad
- Toss the watermelon and blueberries into a large bowl and stir, gently, to combine.
- Chill in the refrigerator until just before serving.
- Add the fresh mint to the fruit.
- Stir and pour the dressing over the fruit and gently toss to coat.
- Sprinkle the goat cheese on top of the salad.
- Serve.
You could also add strawberries to this salad for even more flavor...and of course more red.
