Red White and Blue Salad

This red, white and blue salad will look patriotic on your July 4th table. Sweet fruit meets tart goat cheese with tangy lemon, honey, mint dressing.

  • Dressing
  • ¼ Cup Honey
  • ¼ Cup Lemon Juice
  • ¼ Cup Mint, chopped or chiffonade (cut into fine strips)
  • For the Salad
  • 8 Cups Cubed Watermelon
  • 2 8 Ounce Packages Blueberries
  • Plain Goat Cheese
  1. Dressing
  2. Add the honey and lemon to a bowl and whisk to combine. Set aside.
  3. For the Salad
  4. Toss the watermelon and blueberries into a large bowl and stir, gently, to combine.
  5. Chill in the refrigerator until just before serving.
  6. Add the fresh mint to the fruit.
  7. Stir and pour the dressing over the fruit and gently toss to coat.
  8. Sprinkle the goat cheese on top of the salad.
  9. Serve.
You could also add strawberries to this salad for even more flavor...and of course more red.
