Southwest Chicken Salad with Creamy Cilantro Dressing

A southwest chicken salad with creamy cilantro dressing takes just minutes to toss together and gives you a hearty dinner that tastes fantastic.

  • For the Creamy Cilantro Dressing
  • 1 cup loosely packed cilantro
  • ½ cup Greek yogurt
  • ¼ cup lime juice
  • 1 clove garlic
  • 1 good pinch of kosher salt
  • freshly ground black pepper to taste
  • water to thin
  • For the Salad
  • romaine
  • fresh corn on the cob, roasted
  • cherry tomatoes, cut in half
  • avocados, diced
  • grilled chicken, diced
  1. For the Creamy Cilantro Dressing
  2. Add all of the ingredients to a blender, or food processor, and process until fully blended. Use a bit of water if the consistency is too thick when you're blending it.
  3. For the Salad
  4. Chop up the romaine and pile it into bowls or on a large plate.
  5. Top with corn, tomatoes, avocados and chicken.
  6. The amount of each of these that you use is determined by how many salads you want to make.
To easily roast the corn...cut the kernels off of 2 ears of shucked corn. Toss into a large saute pan and heat over medium heat. Leave kernels alone until they begin to brown slightly. Toss to brown new kernels. Remove from heat when you get the results you are looking for.
