Cucumber Tomato Salad

- 3 cucumbers peeled and sliced
- 1 10 ounce container grape tomatoes, cut in half
- ½ cup diced red onion (or you could use a sweet onion)
- 3 tablespoons white wine vinegar
- 2 tablespoons extra virgin olive oil
- 2 teaspoons dried dill (or 2 tablespoons fresh chopped dill)
- kosher salt, to taste
- freshly ground black pepper, to taste
- Add all ingredients to a large bowl and mix to combine and coat all the vegetables with the vinegar, oil and seasonings.
- Place into refrigerator to chill for at least 2 hours. (The longer this rests, the more flavor the vegetables pick up.)
- Serve.
