Cucumber tomato salad is the perfect way to celebrate summers best vegetables. Served in a tangy dressing this side dish is perfect.

  • 3 cucumbers peeled and sliced
  • 1 10 ounce container grape tomatoes, cut in half
  • ½ cup diced red onion (or you could use a sweet onion)
  • 3 tablespoons white wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons dried dill (or 2 tablespoons fresh chopped dill)
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  1. Add all ingredients to a large bowl and mix to combine and coat all the vegetables with the vinegar, oil and seasonings.
  2. Place into refrigerator to chill for at least 2 hours. (The longer this rests, the more flavor the vegetables pick up.)
  3. Serve.
