Greek Tortellini Salad Recipe

1 8 ounce package spinach tortellini 1½ cups grape tomatoes cut in half 1¼ cups diced cucumber ½ cup diced red onion ½ cup crumbled feta cheese For the Dressing ¼ cup fresh lemon juice 2 tablespoons extra virgin olive oil 2 tablespoons fresh oregano, chopped fine kosher salt freshly ground black pepper Cook the tortellini in well salted water according to package directions. Drain and run cold water over the pasta to cool it down. Add all of the vegetables to a large bowl then toss in pasta. For the Dressing Add all ingredients to a small bowl and whisk to thoroughly combine. Pour dressing over salad. Toss the salad to coat the ingredients in the dressing. Top with crumbled feta cheese. Place bowl in the refrigerator and chill for at least 2 hours before serving. The serving size depends if you're serving this as a side salad or as a main course.
