Kicked Up Macaroni Salad

This kicked up macaroni salad may not be traditional, but it sure is delicious! It still has lots of crisp veggies, but there's a little surprise in here.

  • 2 cups dry Ditalini or Small Elbow Macaroni
  • 1 cup finely chopped celery
  • ½ cup finely chopped red onion
  • ½ red pepper, finely chopped
  • 1 5 ounce package salami sliced into thin strips
  • ⅔ cup mayonnaise
  • ¼ cup Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon kosher salt
  • ½ teaspoon paprika
  • ½ teaspoon freshly ground black pepper
  1. Cook pasta according to package directions then drain and rinse. Allow to cool somewhat.
  2. Add vegetables and salami to bowl.
  3. Toss the pasta into the bowl with the vegetables and salami.
  4. Add the remaining ingredients to the bowl and stir to combine. Make sure that everything is well coated.
  5. Place into refrigerator for at least 2 hours before serving.
