Spiced Candied Pumpkin Seeds

- 2 tablespoons unsalted butter
- 2 tablespoons sugar
- 1 tablespoon brown sugar
- ½ teaspoon cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon kosher salt
- ⅛ teaspoon cayenne pepper
- dash of nutmeg
- 1 cup cleaned pumpkin seeds
- Melt butter in a medium skillet over medium heat.
- Once melted, stir in the sugars and seasonings.
- Continue cooking until the sugars caramelize then add in the seeds.
- Cook, while continuously stirring, until the seeds are puffy (about 3-4 minutes).
- Pour everything out onto a parchment paper lined baking sheet and spread the mixture out.
- Let cool.
- Once everything has cooled and hardened, break into pieces.
- Store in an airtight container.
