Pumpkin carving? Don't throw away the seeds. Make these spiced candied pumpkin seeds for a sweet, spicy and crunchy snack.

  • 2 tablespoons unsalted butter
  • 2 tablespoons sugar
  • 1 tablespoon brown sugar
  • ½ teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon cayenne pepper
  • dash of nutmeg
  • 1 cup cleaned pumpkin seeds
  1. Melt butter in a medium skillet over medium heat.
  2. Once melted, stir in the sugars and seasonings.
  3. Continue cooking until the sugars caramelize then add in the seeds.
  4. Cook, while continuously stirring, until the seeds are puffy (about 3-4 minutes).
  5. Pour everything out onto a parchment paper lined baking sheet and spread the mixture out.
  6. Let cool.
  7. Once everything has cooled and hardened, break into pieces.
  8. Store in an airtight container.
