Sweet Potato Pie Recipe

This recipe is a classic sweet potato pie recipe. You'll love it's slightly sweet flavor and richness. It's so easy to make and even easier to eat.
Serves: 3
  • 3 pounds sweet potatoes
  • ½ cup butter (1 stick), cut into pieces
  • 1½ - 2 cups sugar (I used 1½ cups for a less sweet pie)
  • 3 large eggs
  • 1 cup half and half
  • 2 teaspoons vanilla extract
  • 1 teaspoon lemon juice
  • ½ teaspoon salt
  1. Peel potatoes, cut into small pieces and add to a large pot. Fill pot with enough water to cover potatoes.
  2. Bring to a simmer and cook until potatoes are fork tender.
  3. Strain the potatoes and add them to a large bowl. Add remaining ingredients to potatoes.
  4. Mash potatoes and mix the ingredients. You'll end up with a liquidy mixture.
  5. Preheat oven to 375 degrees Fahrenheit.
  6. Make or buy your favorite pie crust.
  7. Fit the crust into an 8" pie pan.
  8. Pour pie filling into crust and bake for 1½ - 2 hours.
  9. Check pie after 1 hour. The crust should be brown and the top of the pie should be browning and solid when done. (I baked mine for a little over 1½ hours.)
If your pie crust is getting too brown, cover it with foil. This will keep it from burning.
