If Elvis' favorite sandwich was peanut butter and banana, this banana bread recipe would rock his world. Peanut butter, banana and chocolate for the win.
Recipe type: Dessert
Cuisine: American
Serves: 6-8
  • 1⅓ Cups Flour
  • ¾ Teaspoon Salt
  • ½ Teaspoon Baking Soda
  • ¼ Teaspoon Baking Powder
  • 5⅓ Tablespoons Unsalted Butter (at room temperature)
  • ⅓ Cup Sugar
  • ⅓ Cup Maple Syrup (or go all Elvis and use honey instead)
  • 1 Teaspoon Vanilla Extract
  • 2 Large Eggs
  • 1 Cup Bananas (about 3)
  • ⅔ Cup Chocolate Chips
  • ½ Cup Smooth Peanut Butter
  • For the Peanut Butter Topping
  • 1 Tablespoon Unsalted Butter
  • ¾ Cup White Chocolate Chips
  • 3 Tablespoons Smooth Peanut Butter
  • ½ Cup Roasted and Salted Peanuts (roughly chopped)
  1. Preheat oven to 350 degrees Farenheit.
  2. Add the first four ingredients to a large bowl and whisk until everything is thoroughly combined and set aside.
  3. Drop the butter, sugar and maple syrup into the bowl of your mixer and beat until it's light yellow in color.
  4. Add the vanilla, eggs and bananas to the mixing bowl and continue to beat until everything is well incorporated.
  5. Add the flour mixture to the mixer in thirds. Before adding more dry ingredients, make sure the previous addition is mixed in.
  6. Stir the chocolate chips into the batter.
  7. Spoon half of the batter into another bowl and add the peanut butter to it. Stir until the peanut butter is completely mixed in.
  8. Lightly grease and flour an 8½" x 4½" loaf pan.
  9. Alternate adding scoops of the banana batter and peanut butter banana batter to the pan.
  10. Once all the batter is in the pan, run a knife through it to mix some of each of the different flavored batters together.
  11. Make sure the batter is level and slide the pan into the oven.
  12. Bake for 50-60 minutes or until a toothpick inserted in the middle comes out clean.
  13. Let the bread rest 10-15 minutes before removing it from the pan to completely cool.
  14. Once the bread is cool you can make up the topping.
  15. Add the butter and white chocolate chips to a microwave safe container and heat for 30 seconds on high.
  16. Remove from the microwave and stir. Continue doing this until the chips are almost completely melted.
  17. Add the peanut butter to the melted chocolate and stir to combine.
  18. Pour over top of the bread and sprinkle chopped peanuts on top while the topping is still wet.
You could definitely make this with chopped bacon. Just make sure that the bacon is cooked and cooled. Add it to the batter when you add the chocolate chips. But I think it would taste best if it was sprinkled into the topping instead of adding it to the bread itself.
